Udaitha muttai(egg drop) puli kulambu is a south-indian kulambu recipe. It is a tangy and tasty traditional kulambu recipe. It is made with eggs which is added directly into kulambu which tastes yummy. You can boil the eggs and add it to kulambu but this udaitha muttai tastes better than boiled eggs. Do try at your home.

Ingredients :
. Eggs - 4
. Onion - 2 medium sized (finely chopped)
. Curry leaves - 1 sprig
. Tomato - 1 medium sized (finely chopped)
. Oil - 1 tblsp
. Mustard seeds - 1 tsp
. Urad dal - 1/2 tsp
. Fenugreek seeds - 1/2 tsp
. Garlic cloves - 8 nos.
. Kulambu powder - 2 tblsp
. Salt to taste
. Tamarind water - 1/4 cup
. Coconut milk - 1/4 cup
Method :
1. Heat oil in a kadai. Add mustard seeds, urad dal. After it sizzle, add fenugreek seeds, garlic cloves. Saute for few secs.
2. Add onion, curry leaves. Saute until translucent. Add kulambu powder. Saute for 30 secs. Add tomato, salt. Saute until mushy.
3. Add tamarind water and add 1/2 cup of water. Cook for 5 min. Add Coconut milk. Cook for 5 mins.
4. Crack open eggs in a bowl. Add into kulambu one by one. Cover and cook in low flame for 5 mins. Egg puli kulambu is ready.

Soak lemon sized tamarind in hot water and make tamarind water. Keep it aside
Heat oil in a kadai
Add mustard seeds and urad dal
After it sizzle, add fenugreek seeds and garlic cloves. Saute for few secs
Add finely chopped onion and curry leaves
Saute until onion becomes translucent
Add kulambu powder
Saute for 30 secs
Add finely chopped tomato and salt
Saute until tomato becomes mushy
Add tamarind water
Add 1/2 cup of water. Mix well
Cook for 5 mins
Add Coconut milk
Cook for 5 mins
Crack open egg in a bowl to check it good or not
Add it into kulambu one by one without overlapping it ( check salt before adding eggs, do not mix kulambu after adding eggs. It might break eggs and spoil the kulambu)
Cover and cook in low flame for 5 mins. Gently move eggs to conform it not stick to the bottom.
Cook until kulambu thickens ( add Coconut paste instead of Coconut milk to get thick kulambu)
Udaitha muttai puli kulambu is ready to be served with rice
