Egg masala / muttai masala / sidedish for chapathi and rice

Egg masala recipe with step by step pictures 


              Egg masala is a spicy and tasty sidedish for chapathi as well as an accompaniment for rice.  It is very simple that we can cook some masala and add boiled eggs and cook for some more minutes.  I love eggs a lot and try many egg recipes.  This recipe is one of my favourite.

Ingredients  :

. Eggs -  4
.  Onion  -  1 big onion (finely chopped)
.  Tomato  -  2 medium sized  (finely chopped)
.  Ginger garlic paste  -  1 tblsp
.  Curry leaves  -  1 sprig
.  Green chilli  -  1 (finely chopped)
.  Turmeric powder  -  1 tsp
.  Chilli powder  -  1 tblsp
.  Coriander powder  -  1 tblsp
.  Garam masala  -   1 tblsp
.  Oil  -  2 tblsp
.  Cinnamon -  2
.  Cloves  -  4
.  Cardamom  -  2
.  Fennel seeds  -  1 tsp
.  Salt to taste
.  Kasuri methi  -  2 tsp (optional)

Method  :


          1. Heat oil in a kadai.  Add whole spices.  After it crackle,  add onion,  curry leaves and green chilli.  Saute until soft. 

         2. Add ginger garlic paste.  Saute until raw smell goes out.  Add tomatoes followed by turmeric powder and salt.  Saute until mushy.

        3. Add spice powders.  Saute until oil comes out.  Add required water.  Cook for 5 min.  Add boiled eggs.  Cover and cook for 10 min until oil separates.  Egg masala is ready.


Pictorial  : 

           1) Boil the eggs.  Peel the skin and make slits.  Keep it aside. 


           2) Heat oil in a kadai.  (I have used my pressure pan as it has heavy bottom) . 


           3) Add cinnamon, cloves,  cardamom and Fennel seeds.  


          4) After it crackle,  add chopped onion,  curry leaves and green chilli.  


         5) Saute until it becomes soft.  


         6) Add ginger garlic paste.  Saute until raw smell goes out. 


        7) Add chopped tomatoes.  


       8) Add turmeric powder and salt. 


       9) Saute until it becomes mushy. 


       10) Add chilli powder,  coriander powder and garam masala powder.  


       11) Saute until oil comes out. 


        12) Add 1 cup water.  Cook for 5 min in medium flame. 


        13) Add eggs.  


        14) Cover and cook for 10 min in medium flame until oil separates.  


        15) Add crushed kasuri methi.  (This step is optional.  You can just garnish with coriander leaves.  Adding kasuri methi gives you nice aroma) 


        16) cook for a min. 


        17)  Egg masala is ready to be served.
